4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 packet fajita seasoning mix
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 large onion, sliced
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
Fresh cilantro, chopped (for garnish)
Lime wedges (for serving)
Instructions 🥣
Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
Rub the chicken breasts with olive oil and coat them evenly with the fajita seasoning mix.
Place the seasoned chicken breasts in the prepared baking dish.
Arrange the sliced bell peppers and onion around and on top of the chicken breasts.
Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
Remove the foil and sprinkle the shredded cheddar and mozzarella cheeses evenly over the chicken and vegetables.
Return the baking dish to the oven and bake, uncovered, for an additional 5-7 minutes, or until the cheese is melted and bubbly.
Garnish with chopped fresh cilantro and serve with lime wedges.
