Ingredients:
For the crust:
2 1/2 cups all-purpose flour
1 cup unsalted butter, chilled and cut into cubes
1 teaspoon salt
1 teaspoon sugar
6-8 tablespoons ice water
For the filling:
6-8 Granny Smith apples, peeled, cored, and sliced
3/4 cup granulated sugar
1/4 cup brown sugar
1 tablespoon lemon juice
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
2 tablespoons all-purpose flour
1 tablespoon unsalted butter, cut into small pieces
For the topping:
1 egg, beaten
1 tablespoon granulated sugar
Instructions:
Prepare the crust:
In a large bowl, combine the flour, salt, and sugar.
Add the chilled butter cubes and use a pastry blender or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together. Do not overwork the dough.
Divide the dough into two equal parts, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
Prepare the filling:
In a large bowl, combine the sliced apples, granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, salt, and flour. Toss until the apples are evenly coated.
Assemble the pie:
Preheat the oven to 425°F (220°C).
On a lightly floured surface, roll out one disk of dough to fit a 9-inch pie dish. Transfer the dough to the pie dish and trim the edges.
Fill the crust with the apple mixture, and dot with butter pieces.
Roll out the second disk of dough and place it over the filling. Trim the edges, leaving about a 1-inch overhang.
Fold the overhang under itself and crimp the edges to seal. Cut a few slits in the top crust to allow steam to escape.
Bake the pie:
Brush the top crust with the beaten egg and sprinkle with granulated sugar.
Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
If the edges of the crust brown too quickly, cover them with foil during the last 15 minutes of baking.
Cool and serve:
Allow the pie to cool on a wire rack for at least 2 hours before serving. This helps the filling set.
Serve warm or at room temperature, with vanilla ice cream or whipped cream if desired.
