Classic Chili Recipe

Ingredients:

For the Chili:

2 lbs ground beef (or a mix of beef and pork)

1 large onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

2 cans (14.5 oz each) diced tomatoes

1 can (15 oz) tomato sauce

1 can (6 oz) tomato paste

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) pinto beans, drained and rinsed

1 cup beef broth

2 tbsp chili powder

1 tbsp ground cumin

1 tsp paprika

1 tsp dried oregano

1 tsp salt (to taste)

1/2 tsp black pepper

1/4 tsp cayenne pepper (optional, for extra heat)

1 tbsp olive oil

Optional Toppings:

Shredded cheddar cheese

Sour cream

Chopped green onions

Fresh cilantro

Sliced jalapeños

Corn chips or tortilla chips

Instructions:

1. Cook the Meat:

In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.

2. Sauté the Vegetables:

Add the diced onion, garlic, red bell pepper, and green bell pepper to the pot. Sauté for about 5-7 minutes, until the vegetables are softened.

3. Add the Tomatoes and Beans:

Stir in the diced tomatoes (with juice), tomato sauce, and tomato paste. Mix well to combine.

4. Season the Chili:

Add the chili powder, cumin, paprika, oregano, salt, black pepper, and cayenne pepper (if using). Stir to incorporate the spices evenly.

5. Add the Beans and Broth:

Add the drained and rinsed kidney beans, black beans, and pinto beans. Pour in the beef broth and stir everything together.

6. Simmer the Chili:

Bring the chili to a boil, then reduce the heat to low. Cover and let it simmer for at least 1 hour, stirring occasionally. For best results, let it simmer for 2-3 hours to develop deeper flavors.

7. Adjust Seasoning:

Taste the chili and adjust the seasoning if needed, adding more salt, pepper, or spices to your preference.

8. Serve:

Ladle the chili into bowls and add your favorite toppings, such as shredded cheddar cheese, sour cream, chopped green onions, fresh cilantro, sliced jalapeños, and corn chips or tortilla chips.

Enjoy your hearty and delicious homemade chili!
