Ingredients:
3/4 cup all-purpose flour
1 tbsp cornmeal
2 tbsp sugar
2 tsp baking powder
1 tsp salt
3/4 cup milk
2 1/2 cups onions, thinly sliced
Vegetable oil for frying
Instructions:
Combine flour, cornmeal, sugar, baking powder, and salt in a bowl.
Add milk and mix until smooth batter forms.
Stir in the onions until they are well coated with the batter.
Heat about 1/2 inch of vegetable oil in a skillet over medium-high heat.
Drop spoonfuls of the onion batter into the hot oil, flattening slightly with the back of the spoon.
Fry until golden brown, about 2-3 minutes per side.
Drain on paper towels to remove excess oil.
Notes:
Serve hot with your favorite dipping sauce.
For extra flavor, add a pinch of garlic powder or paprika to the batter.
