Bruschetta Chicken




Ingredients:


4 boneless, skinless chicken breasts

1 tbsp olive oil

1 tsp garlic powder

1 tsp dried basil

1/2 tsp salt

1/2 tsp black pepper

2 cups cherry tomatoes, chopped

2 cloves garlic, minced

1/4 cup fresh basil, chopped

1 tbsp balsamic vinegar

1 tbsp olive oil (for topping)

1/2 cup shredded mozzarella cheese

1/4 cup balsamic glaze

Instructions:


Preheat oven to 375°F (190°C). Grease a baking dish with olive oil.

Season chicken breasts with garlic powder, dried basil, salt, and pepper.

In a skillet over medium heat, cook the chicken breasts for 5-6 minutes per side until browned. Transfer to the prepared baking dish.

In a bowl, combine chopped tomatoes, minced garlic, fresh basil, balsamic vinegar, and olive oil.

Spoon the tomato mixture over the chicken breasts, then sprinkle with shredded mozzarella cheese.

Bake in the oven for 15-20 minutes until the chicken is fully cooked and the cheese is melted.

Drizzle with balsamic glaze before serving.

Notes:


Serve with a side of crusty bread to soak up the delicious juices.
