Chicken Satay with Peanut Sauce




✅️✅️Ingredients:


☑️For the Chicken and Marinade:


1.5 pounds chicken, cut into bite-sized pieces

3-4 Thai peppers, chopped (or use spicy red peppers available)

1 shallot, chopped

2 lemongrass stalks, trimmed and chopped (or 1 tsp lemongrass paste)

3 cloves garlic, chopped

1 tsp fresh ginger, chopped

2 tbsp fish sauce

¼ cup brown sugar

3 tbsp soy sauce

2 tbsp sriracha

1 tsp turmeric

1 tsp cumin

2 tbsp chopped cilantro + more for garnish

Spicy chili flakes (optional)

Bamboo skewers, soaked in water for at least 20 minutes

For the Easy Thai Peanut Sauce:


¼ cup creamy peanut butter (use ½ cup for more peanut flavor)

2 tbsp soy sauce

1 tbsp rice wine vinegar

2 tbsp chili-garlic sauce

1 tbsp sesame oil

1 tbsp honey

1 tsp lime juice

1 tsp cayenne powder (or paprika for a milder heat)

1 tsp garlic powder (or 1 clove garlic, finely minced or grated)

1 tsp ginger powder (or 1 tsp fresh grated ginger)

1 tbsp water (or more as needed for thinning)


✴️✴️Instructions:


1️⃣ Add all marinade ingredients to a large bowl or baggie. Mix until the chicken is evenly coated. Cover and refrigerate for at least 1 hour. 🕒


2️⃣ Skewer the chicken pieces onto the bamboo skewers. 🍢


3️⃣ Heat a grill to medium heat and lightly oil the grates. Grill the chicken skewers for 4-5 minutes per side, until the chicken is cooked through (165°F internally). 🔥


4️⃣ Garnish with fresh cilantro and spicy chili flakes. 🌿


5️⃣ For the peanut sauce, whisk all ingredients together in a small bowl until smooth. Add water a teaspoon at a time to achieve desired consistency. 🍜


6️⃣ Serve the grilled chicken with the peanut sauce. 🍽️
