Coconut Lime Grilled Chicken Skewers

Ingredients

For the Chicken Skewers:


1.5 lbs (680 g) chicken breast or thighs, cut into 1-inch cubes

2 tablespoons coconut oil (or vegetable oil)

Salt and pepper, to taste

For the Marinade:


1/2 cup coconut milk

Zest and juice of 1 lime

2 tablespoons honey

2 tablespoons soy sauce

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup shredded coconut (sweetened or unsweetened)

1 teaspoon ground cumin (optional)

1/2 teaspoon red pepper flakes (optional, for extra heat)

For Garnish:


Fresh cilantro, chopped

Lime wedges

Extra shredded coconut (optional)

Instructions

Marinate the Chicken:


Prepare Marinade: In a large bowl, whisk together coconut milk, lime zest, lime juice, honey, soy sauce, minced garlic, grated ginger, shredded coconut, and ground cumin if using. Add red pepper flakes if you prefer extra heat.


Marinate Chicken: Add the chicken cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 1 hour, or up to overnight for deeper flavor.


Prepare the Skewers:


Preheat Grill: Preheat your grill to medium-high heat.


Thread Chicken: Remove the chicken from the marinade and thread the cubes onto skewers. Discard the marinade.
