Ingredients:
1 lb sausage (use chicken or turkey sausage)
1 cup shredded cheddar cheese
1 cup Bisquick mix
4 large eggs
1/4 cup milk
1/4 tsp salt
1/4 tsp black pepper
Instructions:
Preheat oven to 350°F (175°C).
Cook sausage in a skillet over medium heat until browned. Drain excess fat.
In a large bowl, mix together cooked sausage, cheddar cheese, and Bisquick mix.
In another bowl, whisk together eggs, milk, salt, and pepper.
Pour the egg mixture into the sausage mixture and stir until well combined.
Spoon the mixture into a greased muffin tin, filling each cup about 3/4 full.
Bake for 20-25 minutes, until muffins are golden and set.
Notes:
These muffins can be frozen and reheated for a quick breakfast on the go.
