2 tablespoons honey
1 tablespoon freshly grated ginger (or 1 teaspoon ground ginger)
3 cloves garlic, minced
1 tablespoon rice vinegar (or white vinegar)
1 teaspoon sesame oil
1/2 teaspoon ground black pepper
1/2 teaspoon red pepper flakes (optional, for extra heat)
For the Kebabs:
1 large bell pepper, cut into 1-inch pieces
1 red onion, cut into 1-inch pieces
1 cup pineapple chunks (fresh or canned)
2 tablespoons chopped fresh cilantro (for garnish)
For Serving:
Cooked rice or quinoa (optional)
Lime wedges
Instructions
Prepare the Marinade:
Mix Marinade: In a bowl, combine pineapple juice, soy sauce, honey, grated ginger, minced garlic, rice vinegar, sesame oil, black pepper, and red pepper flakes (if using). Whisk until well combined.
Marinate the Pork:
Marinate Pork: Place the pork cubes in a large bowl or resealable plastic bag. Pour the marinade over the pork and toss to coat. Cover and refrigerate for at least 1-2 hours, or overnight for deeper flavor.
Prepare the Kebabs:
Preheat Grill: Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
Assemble Kebabs: Thread the marinated pork cubes, bell pepper pieces, red onion pieces, and pineapple chunks onto the skewers, alternating ingredients as you go.
Grill Kebabs: Brush the grill grates with oil to prevent sticking. Grill the kebabs for 15-20 minutes, turning occasionally, until the pork is cooked through and has nice grill marks. The internal temperature of the pork should reach 145°F (63°C).
Serve:
Garnish: Remove the kebabs from the grill and transfer them to a serving platter. Garnish with chopped fresh cilantro.
Serve: Serve the kebabs with cooked rice or quinoa and lime wedges on the side if desired.
Enjoy: Enjoy these flavorful and juicy kebabs with a side of your choice!
Tips:
Marinade: For best results, marinate the pork overnight to allow the flavors to fully penetrate the meat.
Grill Marks: Ensure the grill is hot and well-oiled to get nice sear marks on the kebabs.
Vegetable Variations: Feel free to add other vegetables such as zucchini or mushrooms to the kebabs.
