Ingredients:
1 lb Polish sausage (kielbasa), sliced
3 large potatoes, peeled and cubed
1 jar (16 oz) sauerkraut, drained
1 onion, sliced
2 tbsp olive oil
1 tsp caraway seeds (optional)
Salt and pepper to taste
1/2 cup chicken broth
Instructions:
In a large skillet, heat olive oil over medium heat.
Add sliced onion and sauté until softened.
Add the cubed potatoes to the skillet, season with salt, pepper, and caraway seeds if using. Cook for 10-15 minutes until potatoes start to brown.
Stir in the sliced Polish sausage and cook for another 5 minutes.
Add sauerkraut and chicken broth. Mix well.
Cover and simmer for 20-25 minutes, until potatoes are tender and flavors meld together.
Notes:
For a spicier version, use a smoked or spicy kielbasa.
Serve with a side of mustard or rye bread.
