Stuffed Tomatoes

  



Another delicious way to use in season tomatoes

You will need-

•4-large tomatoes  

•extra virgin olive oil 

•1-lb Italian sausage removed from the casing

•1/2-cup minced onion

•2-garlic cloves minced 

•1/4-cup bread crumbs 

•1/4-cup grated romano cheese 

•1-cup shredded mozzarella 

•1/4-cup minced basil 


1-preheat the oven to 350 degrees.

2-cut the top off the tomatoes and carefully scoop out the inside using a spoon or a paring knife. Save the tomato meat and juice for step 4

3-add 2 tbs of oil to a large skillet on medium heat sauté the sausage meat breaking it up with a spoon for 5 minutes, drain the grease 

4-on low heat add the tomato meat and juice, onions, garlic and sauté all this together for 2 minutes 

5-remove the skillet from the heat and let this cool for 15 minutes

6-when cooled add the bread crumbs, romano, basil, mozzarella and toss together

7-place the tomatoes on a baking sheet and fill generously with the mixture. 

8-drizzle on a little olive oil and bake for 30 minutes or until the tomato skin begins to crack 


You could make these a day in advance and refrigerate and then re heat. I would first bring them to room temperature then heat in the oven or microwave.
