Ingredients:
1 (8 oz) package cream cheese, softened
1 cup sour cream
1 (16 oz) can refried beans
1 (10 oz) can Rotel tomatoes (diced tomatoes with green chilies), drained
1 (1 oz) packet taco seasoning
2 cups shredded Mexican blend cheese
1 cup shredded cheddar cheese
2 green onions, chopped (optional)
Instructions:
Preheat oven to 350°F (175°C). In a large mixing bowl, combine cream cheese, sour cream, refried beans, Rotel tomatoes, and taco seasoning. Mix until well blended.
Spread the mixture evenly into a baking dish.
Sprinkle shredded Mexican blend cheese and cheddar cheese on top.
Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
Garnish with chopped green onions if desired, and serve hot with tortilla chips.
Notes:
For a spicier kick, add jalapeños or extra green chilies to the mix.
