Garlic Parmesan Grilled Chicken




Ingredients:

For the garlic parmesan sauce:


4 tablespoons butter

3 tablespoons Parmigiano Reggiano (Parmesan cheese), grated

4 cloves garlic, chopped

1 pinch red pepper flakes (optional)

1 tablespoon lemon juice

1 tablespoon parsley, chopped

For the grilled chicken:


1 pound boneless and skinless chicken breasts or thighs, cut into bite-sized pieces

1 teaspoon Cajun seasoning

Instructions:

For the garlic parmesan sauce:


Melt the butter in a pan over medium-low heat.

Add the grated Parmesan cheese, chopped garlic, and red pepper flakes (if using) to the melted butter.

Stir the mixture continuously until the cheese melts and the garlic becomes fragrant, about 2 minutes.

Turn off the heat and mix in the lemon juice and chopped parsley. Set the sauce aside for basting.

For the grilled chicken:


Season the chicken pieces with Cajun seasoning.

Thread the seasoned chicken onto skewers.

Preheat a grill to medium-high heat.

Grill the chicken skewers, basting them with the prepared garlic parmesan sauce.

Cook the chicken for about 2-4 minutes per side, until it is cooked through and lightly charred on both sides.

Remove from the grill, baste once more with the remaining sauce, and serve hot.
