Pumpkin Sugar Cookies with Cream Cheese Frosting
Ingredients:
Cookies:
1 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup brown sugar
1 cup pumpkin puree
1 large egg
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
Cream Cheese Frosting:
1/2 cup unsalted butter, softened
8 oz cream cheese, softened
4 cups powdered sugar
1 teaspoon vanilla extract
A pinch of salt
Directions:
Prepare the Cookies:
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, beat together the butter, granulated sugar, and brown sugar until light and fluffy. Add the pumpkin puree, egg, and vanilla extract; mix well.
In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Using a cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 12-14 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Prepare the Cream Cheese Frosting:
In a large mixing bowl, beat together the butter and cream cheese until smooth and creamy. Add the vanilla extract and salt.
Gradually add the powdered sugar, one cup at a time, beating until light and fluffy.
Once the cookies are completely cooled, spread or pipe the cream cheese frosting onto each cookie. Enjoy!
