Ingredients:
For the Meatloaf:
1 lb ground beef (or a mix of beef and pork)
1 cup breadcrumbs (or crushed crackers)
1/2 cup milk
1/2 cup onion, finely chopped
1 cup mushrooms, diced (button or cremini work well)
3 slices bacon, cooked and crumbled
1/2 cup Swiss cheese, shredded
2 cloves garlic, minced
1 egg
1 teaspoon Worcestershire sauce
Salt and pepper to taste
Optional: fresh parsley, chopped
For the Topping:
1/2 cup ketchup
2 tablespoons brown sugar
Optional: a dash of hot sauce for extra flavor
Instructions:
Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.
Cook the Mushrooms and Onion:
In a skillet over medium heat, sauté the chopped onion and mushrooms until soft and any moisture has evaporated. Let cool slightly.
Mix the Meatloaf Ingredients:
In a large mixing bowl, combine the ground beef, breadcrumbs, milk, cooked mushrooms and onion, crumbled bacon, Swiss cheese, garlic, egg, Worcestershire sauce, salt, and pepper. Mix until just combined; be careful not to overmix.
Shape the Meatloaf:
Transfer the mixture to the prepared loaf pan and shape it into a loaf.
Prepare the Topping:
In a small bowl, mix together the ketchup and brown sugar (and hot sauce, if using). Spread this mixture evenly over the top of the meatloaf.
Bake:
Bake in the preheated oven for about 60-70 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (70°C).
Rest and Serve:
Let the meatloaf rest for about 10 minutes before slicing. Garnish with chopped parsley if desired. Serve with mashed potatoes or your favorite sides!
