 Buttery and Flaky Spinach Puffs



Ingredients:

1 sheet frozen puff pastry, thawed

1 tbsp olive oil or butter

1 small onion, finely diced

2 cloves garlic, minced

3 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)

1/2 cup ricotta cheese

1/2 cup shredded mozzarella or feta cheese

1 large egg

1/4 tsp salt

1/4 tsp black pepper

1/4 tsp nutmeg (optional, for extra warmth)

1 egg (for egg wash, beaten)

Instructions:

Preheat Oven:


Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Prepare the Spinach Filling:


Heat olive oil or butter in a skillet over medium heat. Add the diced onion and cook until softened, about 3 minutes.

Add the garlic and cook for another minute.

Stir in the spinach and cook until wilted (or until heated through if using frozen spinach). Remove from heat and let cool slightly.

Mix the Filling:


In a mixing bowl, combine the cooked spinach mixture, ricotta cheese, shredded mozzarella (or feta), 1 egg, salt, pepper, and nutmeg (if using). Mix until well combined.

Prepare the Puff Pastry:


Roll out the thawed puff pastry on a lightly floured surface. Cut it into 9 equal squares.

Assemble the Puffs:


Place a spoonful of the spinach mixture in the center of each square.

Fold each square into a triangle by bringing the corners together. Press the edges with a fork to seal. Brush the tops with the beaten egg wash for a golden finish.

Bake:


Place the puffs on the prepared baking sheet and bake for 15-18 minutes, or until golden brown and puffy.

Serve:


Let cool for a few minutes before serving. Enjoy these delicious spinach puffs warm!
