🥔 Crock Pot Crack Potato Soup 🥓
Ingredients:
6 cups peeled and diced potatoes
1 cup shredded cheddar cheese
½ cup cooked and crumbled bacon
1 packet ranch seasoning mix
4 cups chicken or vegetable broth
1 cup heavy cream (or half-and-half for a lighter version)
Salt and pepper, to taste
Optional garnishes: extra cheese, bacon bits, chopped green onions, or chives
Instructions:
Prepare the Potatoes: Begin by peeling and dicing the potatoes into bite-sized cubes to ensure they cook evenly.
Layer Ingredients: Add the diced potatoes to the bottom of your crock pot. Sprinkle the ranch seasoning over the potatoes. Then, top with shredded cheddar cheese and crumbled bacon.
Add the Broth: Pour the chicken or vegetable broth over the layers, ensuring the liquid just covers the potatoes and other ingredients.
Cook the Soup: Cover the crock pot and cook on low for 7-8 hours or on high for 4 hours. You’ll know it’s ready when the potatoes are fork-tender and mash easily.
Add Cream and Season: Once the cooking time is complete, stir in the heavy cream (or half-and-half). Taste and adjust the seasoning with salt and pepper. For a creamier texture, use an immersion blender to blend the soup until smooth.
Serve: Ladle the soup into bowls, garnishing with extra cheese, crispy bacon bits, and chopped green onions or chives for added flavor and color.
