🥘 Crockpot Creamy Potato & Hamburger Soup 🍲
Ingredients:
1 pound ground beef
1 large onion, diced
2 cloves of garlic, minced
4 large potatoes, peeled and cubed
3 carrots, sliced
2 stalks celery, sliced
4 cups of chicken or beef broth
1 tsp dried thyme
1 tsp dried parsley
1 tsp paprika
Salt and pepper to taste
1 cup heavy cream
2 cups shredded cheddar cheese
1 cup milk
2 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
Fresh parsley, chopped (for garnish)
Extra shredded cheddar cheese (for garnish)
Instructions:
Brown the Ground Beef: Over medium-high heat, brown the ground beef in a large skillet until fully cooked. Drain excess grease. Incorporate the diced onion and minced garlic, cooking until the onion is clear and fragrant, about 5 minutes.
Prepare the Crockpot: Move the cooked beef mixture to a crockpot. Add the cubed potatoes, sliced carrots, and celery.
Add Broth and Seasonings: Pour the broth into the crockpot. Season with thyme, parsley, paprika, salt, and pepper. Stir to mix everything.
Cook on Low: Cover and set the crockpot to low for 6-8 hours, or on high for 3-4 hours, until the vegetables are tender.
Add Cream and Cheese: Once the veggies are soft, blend in the heavy cream, cheddar cheese, and milk. For a thicker soup, add the cornstarch mixture. Continue to cook on low for another 15-20 minutes until the cheese is melted and the soup is creamy.
Serve: Serve the soup hot, garnished with chopped parsley and extra cheese. Enjoy with a side of crusty bread for a hearty meal.
