Ingredients:


4 large potatoes, peeled and diced

1 small onion, diced

3 garlic cloves, minced

4 cups broccoli florets (fresh or frozen)

4 cups vegetable or chicken broth (low-sodium)

1 cup heavy cream or half-and-half

2 cups shredded sharp cheddar cheese

1 teaspoon dried thyme

½ teaspoon black pepper

Salt to taste

2 tablespoons butter

Extra shredded cheddar and chopped green onions (for garnish)

Instructions:


Prepare the Soup:


Add the diced potatoes, onion, garlic, broccoli, dried thyme, and black pepper to the crockpot.

Pour in the vegetable or chicken broth, ensuring the vegetables are mostly covered.

Blend and Thicken:

Taste and adjust seasoning with salt and more pepper if needed.
