2 cups mixed dried fruits (raisins, currants, dried cherries, apricots, etc.)

1 cup nuts (walnuts, pecans, or almonds), chopped

1 cup orange juice (or rum for soaking)

1 tablespoon grated orange zest

1 teaspoon vanilla extract

For the Cake Batter:

1 cup unsalted butter, softened

1 cup brown sugar, packed

4 large eggs

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon ground ginger

½ teaspoon salt

1 teaspoon vanilla extract

Cool and Serve: 11. Allow the fruitcake to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely. 12. For the best flavor, wrap the cooled fruitcake in plastic wrap and let it sit for at least 24 hours before slicing.
