Easy Hunan Chicken
Ingredients:
1 lb boneless, skinless chicken breasts, thinly sliced
2 tablespoons soy sauce
1 tablespoon cornstarch
2 tablespoons vegetable oil
1 small bell pepper, sliced
1 small onion, sliced
1 zucchini, sliced
2 cloves garlic, minced
2 tablespoons chili paste (adjust to taste)
1 tablespoon hoisin sauce
1 tablespoon rice vinegar
1/2 cup chicken broth
Directions:
In a bowl, toss the sliced chicken with soy sauce and cornstarch. Set aside to marinate for 10 minutes.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the marinated chicken and stir-fry until browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
Add the remaining tablespoon of vegetable oil to the skillet. Stir-fry the bell pepper, onion, zucchini, and garlic for 3-4 minutes, until the vegetables are tender.
In a small bowl, mix together the chili paste, hoisin sauce, rice vinegar, and chicken broth.
Return the chicken to the skillet and pour the sauce mixture over it. Stir to coat everything and simmer for 2-3 minutes until the sauce thickens slightly.
Serve the Hunan chicken over steamed rice.
