Ingredients:


- 1 pound beef stew meat, cut into bite-sized pieces

- 2 large onions, thinly sliced

- 3 cloves garlic, minced

- 4 cups beef broth

- 1 cup egg noodles

- 2 tablespoons olive oil

- 1 tablespoon Worcestershire sauce

- 1 teaspoon dried thyme

- 1 teaspoon dried rosemary

- Salt and pepper to taste

- 1 cup shredded Swiss cheese (or your preferred cheese)

- Fresh parsley, chopped (for garnish)


Instructions:


1. Sauté the Onions:


   - In a large pot or Dutch oven, heat the olive oil over medium heat.

   - Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 15-20 minutes.

   - Add the minced garlic and cook for an additional 1-2 minutes until fragrant.


2. Brown the Beef:


   - Push the onions to the side of the pot and add the beef stew meat.

   - Season with salt and pepper, and brown the meat on all sides, about 5-7 minutes.


3. Add Broth and Seasonings:


   - Pour in the beef broth and Worcestershire sauce.

   - Stir in the dried thyme and rosemary.

   - Bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer for about 1 hour, or until the beef is tender.


4. Cook the Noodles:


   - After the beef has simmered, add the egg noodles to the pot.

   - Cook for an additional 8-10 minutes, or until the noodles are tender.


5. Add Cheese and Serve:


   - Once the noodles are cooked, stir in the shredded Swiss cheese until melted and well combined.

   - Taste and adjust seasoning if necessary.

   - Serve hot, garnished with fresh parsley.
