🎄 Holiday Sweet Potato & Goat Cheese Delight
A beautifully layered dish featuring sweet potatoes, creamy goat cheese, and a maple-pecan glaze, perfect for the holiday table.
Ingredients:
4 medium sweet potatoes, peeled and sliced into 1/4-inch rounds
200g goat cheese, softened
1/2 cup pecans, roughly chopped
1/4 cup pure maple syrup
2 tbsp olive oil
1 tbsp fresh thyme leaves, plus extra for garnish
Salt and pepper to taste
Instructions:
Roast the Sweet Potatoes
Preheat your oven to 200°C (400°F). Place the sweet potato slices on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20-25 minutes or until tender, flipping halfway through.
Prepare the Maple-Pecan Drizzle
In a small saucepan, heat the maple syrup over medium heat. Stir in the chopped pecans and cook for 2-3 minutes, allowing the pecans to absorb the maple flavor. Remove from heat and set aside.
Layer the Sweet Potatoes & Goat Cheese
Once the sweet potatoes have finished roasting, layer them on a serving platter. Start with one sweet potato slice, spread a layer of goat cheese, then add another sweet potato slice. Repeat until you have 3 layers per stack.
Drizzle & Garnish
Drizzle the maple-pecan mixture over the sweet potato stacks. Sprinkle fresh thyme leaves over the top for a pop of herbal freshness.
Serve Warm
Serve immediately as a festive side dish or appetizer.
