Ingredients:
1 lb large shrimp, peeled and deveined (tails on or off, as preferred)
1/4 cup olive oil
3 tbsp lemon juice (freshly squeezed)
3 cloves garlic, minced
1 tsp smoked paprika
1/2 tsp cayenne pepper (adjust to taste)
1 tsp dried oregano
1 tsp salt
1/2 tsp black pepper
Fresh parsley, chopped (for garnish)
Lemon wedges (for serving)
Instructions:
Prepare the Marinade:
In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, smoked paprika, cayenne pepper, oregano, salt, and black pepper until well combined.
Marinate the Shrimp:
Add the peeled and deveined shrimp to the marinade, tossing to coat them evenly. Cover the bowl and refrigerate for 30 minutes to 1 hour, allowing the shrimp to absorb the flavors.
Preheat the Grill:
Preheat your grill to medium-high heat (about 400°F/200°C). If using skewers, soak wooden skewers in water for 30 minutes to prevent burning.
Skewer the Shrimp:
If using skewers, thread the marinated shrimp onto the skewers, leaving a little space between each shrimp for even cooking. If grilling directly on the grill, you can skip this step.
Grill the Shrimp:
Place the shrimp on the grill and cook for 2-3 minutes on each side or until they turn pink and opaque. Be careful not to overcook, as shrimp can become tough.
Serve:
Remove the shrimp from the grill and transfer to a serving platter. Garnish with freshly chopped parsley and serve with lemon wedges.
