Slow Cooker Cheddar Corn
Ingredients:
2 cans (15 oz each) sweet corn, drained (or 4 cups frozen corn)
1 can (14 oz) creamed corn
1 cup shredded sharp cheddar cheese
1/2 cup cream cheese, softened
1/4 cup milk (or heavy cream for a richer flavor)
1/4 cup unsalted butter, melted
1 tablespoon sugar (optional, to enhance sweetness)
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
1/2 cup cooked bacon bits (optional, for garnish)
Chopped green onions or fresh parsley (for garnish, optional)
Instructions:
Prepare the Slow Cooker:
Lightly grease the inside of a slow cooker with cooking spray or a little butter.
Combine Ingredients:
In the slow cooker, combine the sweet corn, creamed corn, shredded cheddar cheese, cream cheese, milk, melted butter, sugar (if using), garlic powder, onion powder, salt, and pepper. Stir well to combine all the ingredients.
Cook:
Cover and cook on low for 2-3 hours or on high for 1-2 hours, stirring occasionally, until the cheese is melted and the mixture is heated through.
Serve:
Once cooked, taste and adjust the seasoning if needed.
If desired, top with cooked bacon bits and garnish with chopped green onions or parsley before serving.
