**Teriyaki Salmon Skewers
Ingredients:
For the Skewers: 1 1/2 lbs salmon fillets, cut into 1-inch cubes 2 bell peppers (red and yellow), cut into 1-inch pieces 1 red onion, cut into chunks 1 tablespoon olive oil Salt and pepper, to taste For the Teriyaki Marinade: 1/3 cup soy sauce 1/4 cup honey 1/4 cup rice vinegar 2 tablespoons sesame oil 2 cloves garlic, minced 1 tablespoon grated ginger 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
Directions:
In a medium bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, garlic, and grated ginger. Set aside. Place the salmon cubes in a shallow dish or zip-top bag, and pour half of the marinade over the salmon. Let it marinate in the refrigerator for 20-30 minutes. Reserve the remaining half for basting. While the salmon marinates, soak wooden skewers in water for 15 minutes to prevent burning. Preheat the grill or grill pan to medium-high heat. Thread the marinated salmon cubes, bell peppers, and red onion chunks onto the soaked skewers, alternating ingredients. Brush the skewers lightly with olive oil and season with salt and pepper. Grill the skewers for 8-10 minutes, turning occasionally and brushing with the reserved marinade, until the salmon is cooked through and slightly charred. In a small saucepan, heat the remaining marinade over medium heat. Stir in the cornstarch mixture and cook until thickened about 2 minutes. Drizzle the thickened sauce over the grilled skewers before serving.
