Apple Crisp Cheesecake

Ingredients:
Crust:
1 ½ cups graham cracker crumbs
1/3 cup granulated sugar
½ cup unsalted butter, melted
Cheesecake Layer:
24 oz cream cheese, softened
¾ cup granulated sugar
3 large eggs
1 tsp vanilla extract
Apple Crisp Topping:
3 medium apples, peeled and thinly sliced
¼ cup granulated sugar
1 tsp cinnamon
½ cup all-purpose flour
½ cup rolled oats
½ cup brown sugar
1/3 cup unsalted butter, softened
Directions:
Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of the prepared pan. Bake for 8 minutes, then set aside.
In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each. Stir in vanilla extract. Pour the mixture over the crust.
Toss apple slices with granulated sugar and cinnamon. Spread evenly over the cheesecake layer.
In another bowl, combine flour, oats, brown sugar, and softened butter. Mix until crumbly, then sprinkle over the apples.
Bake for 50–60 minutes or until the cheesecake is set. Cool completely, then refrigerate for at least 4 hours before serving.
