Brownie Bottom Cheesecake topped with Homemade Strawberry Curd 🤤

*Brownie Bottom:*


Ingredients:


- 1 and 1/2 sticks unsalted butter (12 tablespoons), plus more for greasing

- 2 cups sugar

- 4 large eggs

- 1/2 cup unsweetened cocoa powder

- 1 teaspoon vanilla extract

- 1 and 1/4 cups all-purpose flour

- 1 teaspoon salt

- 1 cup semi-sweet chocolate chips


Instructions:


1. Preheat oven to 350°F (180°C). Grease a 9-inch springform pan.

2. Melt butter and sugar in a saucepan over low heat.

3. Remove from heat; stir in cocoa powder until combined.

4. Beat in eggs one at a time, then stir in vanilla.

5. Add flour and salt; mix until just combined.

6. Stir in chocolate chips.

7. Pour into prepared pan; bake 25-30 minutes or until set.


*Cheesecake:*


Ingredients:


- 16 ounces cream cheese, softened

- 1/2 cup granulated sugar

- 4 large eggs, separated

- 1 teaspoon vanilla extract

- 1 cup sour cream


Instructions:


1. Beat cream cheese and sugar until smooth.

2. Beat in egg yolks one at a time.

3. Stir in vanilla.

4. Beat in sour cream.

5. Pour over brownie layer; bake 45-50 minutes or until set.


*Strawberry Curd Topping:*


Ingredients:


- 1 cup hulled strawberries

- 1/2 cup granulated sugar

- 2 tablespoons cornstarch

- 2 tablespoons lemon juice

- 1/4 cup unsalted butter, melted

- 2 large egg yolks


Instructions:


1. Puree strawberries in a blender.

2. Whisk sugar, cornstarch, and lemon juice in a saucepan.

3. Add strawberry puree; cook over medium heat, stirring constantly.

4. Remove from heat; stir in butter and egg yolks.

5. Cool to room temperature.


*Assembly:*


1. Let brownie and cheesecake cool completely.

2. Spread strawberry curd over cheesecake.

3. Refrigerate 4 hours or overnight.

4. Release springform pan sides; slice and serve.
