Ingredients:
1 pre-made pie crust
2 medium sweet potatoes, cooked and mashed (about 1 1/2 cups)
1 cup buttermilk
3/4 cup brown sugar, packed
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
3 large eggs
1 tsp vanilla extract
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp salt
Instructions:
Prepare the Oven and Crust:
Preheat your oven to 350°F (175°C).
Place the pie crust in a 9-inch pie dish and crimp the edges as desired. Set aside.
Make the Filling:
In a large mixing bowl, combine the mashed sweet potatoes, buttermilk, brown sugar, granulated sugar, melted butter, eggs, vanilla, cinnamon, nutmeg, and salt.
Beat the mixture until smooth and creamy, ensuring all ingredients are well combined.
Pour and Bake:
Pour the filling into the prepared pie crust, smoothing the top with a spatula.
Bake for 50-60 minutes, or until the filling is set and a knife inserted into the center comes out clean.
If the crust starts to brown too quickly, cover the edges with foil.
Cool and Serve:
Allow the pie to cool completely before slicing. For the best flavor, let it rest for a few hours.
Serve with a dollop of whipped cream if desired.
