Chewy Oatmeal Cookies
Ingredients:
1 cup unsalted butter, softened
1 cup brown sugar, packed
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
3 cups old-fashioned rolled oats
1 cup raisins (optional) or chocolate chips
Directions:
Preheat Oven:
Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
Cream Butter and Sugars:
In a large mixing bowl, use an electric mixer to cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Add Eggs and Vanilla:
Beat in the eggs one at a time, followed by the vanilla extract.
Combine Dry Ingredients:
In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add this mixture to the wet ingredients, mixing just until combined.
Incorporate Oats and Raisins:
Stir in the oats and raisins (or chocolate chips, if using) until evenly distributed.
Scoop and Bake:
Drop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Flatten slightly with the back of a spoon.
Bake for 10-12 minutes, or until the edges are golden and the centers look slightly underdone.
Cool and Enjoy:
Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
