Ingredients:
- 1 cup jasmine rice (uncooked)
- 1/2 pound boneless, skinless chicken breast, diced
- 1/2 pound shrimp, peeled and deveined
- 1 cup fresh pineapple, diced
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 small onion, diced
- 1/2 cup bell pepper, diced (any color)
- 1/2 cup peas and carrots (frozen mix is fine)
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 2 green onions, sliced
- Salt and pepper to taste
- Lime wedges for serving
Instructions:
1. Cook the Rice:
- Rinse the jasmine rice under cold water until the water runs clear.
- Cook the rice according to package instructions. Once cooked, let it cool and set aside.
2. Prepare the Chicken and Shrimp:
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add the diced chicken and season with salt and pepper. Cook until the chicken is no longer pink, about 5-7 minutes.
- Remove the chicken from the skillet and set aside.
3. Cook the Shrimp:
- In the same skillet, add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove and set aside with the chicken.
4. Sauté the Vegetables:
- Add the remaining tablespoon of vegetable oil to the skillet.
- Sauté the minced garlic and diced onion until fragrant, about 1-2 minutes.
- Add the bell pepper and peas and carrots mix, cooking for another 3-4 minutes until the vegetables are tender.
5. Combine Everything:
- Add the cooked rice to the skillet, mixing well with the vegetables.
- Stir in the cooked chicken, shrimp, diced pineapple, soy sauce, and oyster sauce (if using). Cook for an additional 3-4 minutes, stirring frequently to combine all the flavors.
6. Garnish and Serve:
- Remove from heat and stir in the sliced green onions.
- Serve hot with lime wedges on the side for an extra burst of flavor.
