Cranberry Dijon Pork Loin Roast with Apple Cider Glaze

Directions:
Preheat Oven: Preheat your oven to 375°F (190°C).
Prepare the Pork Roast: Season the pork loin roast generously with salt and pepper. Rub the Dijon mustard all over the surface of the roast, ensuring an even coating. Sprinkle the cranberries over the roast, gently pressing them onto the mustard layer so they adhere.
