Ingredients:
- 4 cups stale bread, cubed
- 1/2 cup unsalted butter
- 1 medium onion, finely chopped
- 2 celery stalks, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
- 1/2 cup chicken or vegetable broth
- 2 large eggs, beaten
- 1 cup breadcrumbs (for coating)

Instructions:
1. Prepare the Bread:
- Preheat your oven to 350°F (175°C).
- Spread the cubed bread on a baking sheet and toast in the oven for about 10-15 minutes until lightly golden and dry. Remove and let cool.
2. Sauté the Vegetables:
- In a large skillet, melt the butter over medium heat.
- Add the chopped onion and celery, and sauté until softened, about 5 minutes.
- Stir in the minced garlic, thyme, sage, salt, and pepper, and cook for another minute until fragrant.

- Pour in the chicken or vegetable broth and beaten eggs. Mix until everything is well combined and the bread is moistened.
4. Form the Balls:
- Using your hands, form the mixture into small balls, about 1-2 inches in diameter.
- Roll each ball in breadcrumbs to coat evenly.
5. Fry the Stuffing Balls:
- In a large skillet, heat oil over medium-high heat.
- Once hot, carefully add the stuffing balls in batches, making sure not to overcrowd the pan.
- Fry for about 4-5 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
6. Serve:
