Crockpot Meatloaf with Savory French Onion and Swiss Cheese
Ingredients:
1 lb ground beef
1/2 cup breadcrumbs
1 egg
1 onion, finely chopped
1 packet French onion soup mix
1/2 cup milk
1 cup Swiss cheese, shredded
Salt and pepper to taste
2 tbsp olive oil
Fresh parsley for garnish
Directions:
In a pan, heat olive oil over medium heat and sauté the chopped onion until golden brown (about 5-7 minutes). Set aside.
In a bowl, combine the ground beef, breadcrumbs, egg, French onion soup mix, milk, salt, and pepper. Mix until well combined.
Shape the meat mixture into a loaf and place it in the Crockpot.
Pour the sautéed onions over the meatloaf.
Cover and cook on low for 6-7 hours or on high for 3-4 hours until the meatloaf is fully cooked.
About 10 minutes before serving, sprinkle the shredded Swiss cheese on top and allow it to melt.
Garnish with fresh parsley and serve with mashed potatoes or vegetables. Enjoy!
