Fresh Cod with Tomato Basil Sauce

 



Ingredients:

- 2 tablespoons olive oil (for sauce)  

- 1/4 teaspoon crushed red pepper flakes  

- 3 garlic cloves, finely minced  

- 1 pint cherry tomatoes, halved  

- 1/4 cup vegetable broth  

- 1/2 cup fresh basil, finely chopped  

- 2 tablespoons lemon juice  

- 1/2 teaspoon lemon zest  

- 1/2 teaspoon salt (adjust to taste)  

- 1 teaspoon sugar  

- 1/4 teaspoon black pepper (adjust to taste)  

- 2 tablespoons olive oil (for cod)  

- 1 1/2 pounds fresh cod, cut into 4 fillets  

- Salt and pepper to taste  


Directions:

1. Prepare the Tomato Basil Sauce: In a large sauté pan over medium heat, warm 2 tablespoons of olive oil. Add the crushed red pepper flakes and minced garlic, cooking for about 1 minute until the garlic is fragrant but not browned.  

   

2. Add the Tomatoes: Stir in the cherry tomatoes and cook for about 8-12 minutes, stirring occasionally, until they start to soften and blister.  


3. Combine the Broth and Seasonings: Pour in the vegetable broth, then add the chopped basil, lemon juice, lemon zest, salt, sugar, and black pepper. Cook for another 2 minutes. Taste and adjust the seasoning if needed. Transfer the sauce to a bowl and set aside.  


4. Cook the Cod: In a large nonstick pan, heat 2 tablespoons of olive oil over medium heat. Pat the cod fillets dry with paper towels, then season both sides with salt and pepper.  


5. Sear the Cod: Place the cod fillets in the hot oil and cook for about 3 minutes per side, or until golden brown and cooked through. Flip the fish carefully.  


6. Serve: Pour the prepared tomato basil sauce over the cod in the pan, allowing it to warm through for about 1 minute.  


7. Garnish and Enjoy: Serve immediately with extra fresh basil on top if desired.
