Ingredients:

- 3 russet potatoes, peeled and quartered

- 4 pounds chicken thighs, skin-on, bone-in

- ½ cup olive oil

- ½ cup fresh lemon juice

- 6 cloves garlic, minced

- 1 tablespoon dried oregano

- 1 tablespoon salt

- 1 teaspoon pepper


Instructions:

1. Preheat your oven to 400°F (200°C). This will prepare a warm environment for roasting.

   

2. In a large mixing bowl, combine the chicken thighs, quartered potatoes, olive oil, fresh lemon juice, minced garlic, dried oregano, salt, and pepper. Make sure to toss everything together thoroughly so each ingredient is well-coated in the aromatic mixture.


3. Transfer the chicken and potatoes into a large roasting pan, spreading them out evenly. This ensures they roast nicely without crowding.


4. Place the pan in the preheated oven. Roast for about 45-50 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C), and the potatoes are tender, golden, and bubbling.


5. Once cooked, take the roasting pan out of the oven. Allow it to cool for a couple of minutes before serving. Enjoy the delightful aroma!
