Homemade Wonton Soup
Ingredients:
For the Wontons:
1/2 lb ground pork
1/4 lb shrimp, peeled and chopped
2 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon grated ginger
1 garlic clove, minced
1 tablespoon green onion, finely chopped
1 package wonton wrappers
For the Soup:
6 cups chicken broth
1 tablespoon soy sauce
1 tablespoon sesame oil
2 teaspoons fresh ginger, grated
2 garlic cloves, minced
1/2 cup sliced mushrooms (shiitake or button)
2 cups baby spinach or bok choy
2 green onions, chopped (for garnish)
Salt and pepper to taste
Directions:
Prepare the Wontons:
In a bowl, combine the ground pork, chopped shrimp, soy sauce, sesame oil, grated ginger, minced garlic, and chopped green onion. Mix well until everything is fully combined.
Place a small spoonful of the filling in the center of each wonton wrapper. Wet the edges of the wrapper with a little water and fold into a triangle or envelope shape, pinching the edges to seal the filling inside. Repeat until all the wontons are made.
Prepare the Soup:
In a large pot, bring the chicken broth to a simmer over medium heat. Add the soy sauce, sesame oil, ginger, and garlic. Stir to combine.
Add the sliced mushrooms to the broth and let them simmer for 5-7 minutes until tender.
Carefully drop the wontons into the simmering broth. Allow the wontons to cook for 4-5 minutes or until they float to the surface, indicating they are fully cooked.
Finish the Soup:
Add the spinach (or bok choy) to the pot and let it wilt in the hot broth for about 1-2 minutes.
Season the soup with salt and pepper to taste.
Serve: Ladle the wonton soup into bowls, garnish with fresh green onions, and serve hot.
