Hot Cheesy Salmon Sandwich



 Ingredients

  

212 g /7.5oz canned salmon drained, discard skin and bones

100 g / 3.5oz hot smoked salmon flaked

2 green onions sliced

1 small pickle (gherkin) or 1 tsp capers

25 g / ¼ cup celery (1 small rib) diced

1 tsp fresh dill

110 g / ½ cup mayonnaise I used low fat

½ tsp mustard

1 tbsp lemon juice

50 g / ½ cup grated sharp cheddar such as aged cheddar

4 slices good quality bread

Instructions

 

Combine all ingredients other than cheese and bread in a bowl and mix, flaking the pieces of salmon so they are even sized.

Add the salmon mixture to slices of bread and cover with shredded cheese. Cook in a preheated oven with the broiler on for three minutes.

Notes

This salmon sandwich can also be cooked in an air fryer for 3 minutes.
