🍋 Lemon & Pistachio Brownie Bars

 



Ingredients:


Brownie Base:

- 1/2 cup unsalted butter, melted

- 1 cup granulated sugar

- 2 large eggs

- Zest of 1 lemon

- 1/4 cup fresh lemon juice

- 1 cup all-purpose flour

- 1/2 teaspoon baking powder

- 1/4 teaspoon salt


Topping:

- 1/3 cup pistachios, roughly chopped

- 1 cup powdered sugar

- 2 tablespoons fresh lemon juice


Directions:


1. Preheat your oven to 350°F (175°C). Grease and line an 8x8-inch baking pan with parchment paper.


2. In a mixing bowl, combine the melted butter and sugar until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the lemon zest and lemon juice.


3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture until just combined.


4. Pour the batter into the prepared baking pan and smooth the top. Sprinkle the chopped pistachios evenly over the batter.


5. Bake for 20-25 minutes, or until the edges are lightly golden and a toothpick inserted into the center comes out clean.


6. Allow the brownies to cool completely in the pan. In a small bowl, mix the powdered sugar and lemon juice to create a glaze. Drizzle over the cooled brownies and let it set before slicing.
