Directions:
1. Preheat your oven to 400°F (200°C).
2. Wash the sweet potatoes and slice them into 1/2-inch rounds. You can keep the skin on or peel them if you prefer.
3. In a large bowl, toss the sweet potato slices with the melted butter, 1 teaspoon cinnamon, salt, and black pepper until they are evenly coated. You can use a spatula, your hands, or even a ziplock bag for easy mixing.
4. Arrange the sweet potato slices in a single layer on a baking tray, making sure to leave some space between each piece.
5. Roast the sweet potatoes in the oven for 25-30 minutes, or until they are fork-tender.
6. While the sweet potatoes are roasting, combine the maple syrup, chopped walnuts, 1/2 teaspoon cinnamon, and thyme in a small bowl. Mix well.
7. Once the sweet potatoes are done, remove them from the oven and spoon about 1 teaspoon of the walnut-maple mixture onto each slice.
8. Sprinkle the crumbled goat cheese evenly over the sweet potatoes.
9. Return the baking tray to the oven and bake for an additional 8-10 minutes, allowing the walnuts to toast and the goat cheese to soften.
10. Serve the sweet potatoes warm, garnished with extra thyme if desired.
