- 2 tbsp unsalted butter

- 2 tbsp all-purpose flour

- 2 cups chicken, beef, or vegetable broth (low sodium preferred)

- Salt and pepper to taste

**Mashed Potatoes:**

1. **Boil Potatoes:**

   - Peel and cut potatoes into chunks for even cooking.

   - Place them in a pot with enough salted water to cover them. Bring to a boil and cook until fork-tender (about 15-20 minutes).


2. **Mash Potatoes:**

   - Drain the potatoes and return them to the pot. Let them steam dry for a minute.

   - Add butter and mash the potatoes using a potato masher or ricer.
