One-Pan Garlic Herb Chicken with Potatoes & Green Beans
Ingredients:
4 boneless, skinless chicken breasts
1 lb baby potatoes, halved
2 cups fresh green beans, trimmed
3 tablespoons olive oil
1 tablespoon fresh garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon paprika
Salt and pepper to taste
1 tablespoon fresh parsley, chopped (for garnish)
Directions:
Preheat the Oven:
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
Prepare the Chicken:
In a small bowl, mix the olive oil, minced garlic, oregano, thyme, paprika, salt, and pepper. Coat the chicken breasts with this garlic herb mixture on both sides.
Prepare the Vegetables:
On the prepared baking sheet, toss the halved baby potatoes with a little olive oil, salt, and pepper. Spread them out in a single layer.
Arrange the Chicken and Green Beans:
Place the seasoned chicken breasts on the baking sheet with the potatoes, leaving some space between the chicken and potatoes. Add the green beans around the chicken and potatoes, drizzling them with a little more olive oil and seasoning with salt and pepper.
Bake the Dish:
Bake for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F or 75°C) and the potatoes are tender. If you prefer a crispier texture, broil the dish for 2-3 minutes at the end.
Garnish and Serve:
Sprinkle the freshly chopped parsley over the chicken and vegetables before serving.
