Pineapple Christmas Balls
Ingredients:
1 1/2 cups crushed pineapple, well-drained
2 cups finely crushed graham cracker crumbs
1 cup sweetened shredded coconut (plus extra for rolling)
Directions:
Mix Ingredients: In a large bowl, combine the crushed pineapple, graham cracker crumbs, and shredded coconut. Mix until well combined and the mixture holds together when pressed.
Shape Balls: Using your hands, roll the mixture into 1-inch balls.
Coat with Coconut: Roll each ball in additional shredded coconut to coat.
Chill: Place the balls on a parchment-lined tray and refrigerate for at least 1 hour, or until firm.
Serve: Enjoy these tropical, no-bake holiday treats!
Tips:
For extra sweetness, you can drizzle the balls with melted white chocolate before serving.
