Ingredients:
1/4 cup melted coconut oil 🥥
1/4 cup honey (or maple syrup) 🍯
1 cup rolled oats 🌾
1 cup quick cooking oats 🌾
2/3 cup dried cranberries 🍒
2/3 cup pumpkin seeds 🎃
1/4 cup ground flaxseed 🌱
1-2 tsp pumpkin pie spice (or cinnamon) 🎃
1/2 tsp sea salt 🧂
1/2 cup pumpkin puree 🎃
2 large eggs (beaten) 🥚
Directions:
1️⃣ Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
2️⃣ In a large bowl, combine oats, cranberries, pumpkin seeds, flaxseed, pumpkin pie spice, and salt. Stir in pumpkin puree, eggs, melted coconut oil, and honey until fully mixed.
