"Red Velvet Cinnamon Rolls
Ingredients:
- 2 cups all-purpose flour
- 1/4 cup cocoa powder
- 1/2 cup sugar
- 1 packet (2 1/4 tsp) active dry yeast
- 1/2 tsp salt
- 1/2 cup milk, warmed
- 1/4 cup butter, melted
- 1 large egg
- 1 tsp vanilla extract
- 2 tbsp red food coloring
- 1/2 cup brown sugar
- 2 tbsp cinnamon
- 1/4 cup vegetable spread, softened
- 4 oz cream cheese, softened
- 1/2 cup powdered sugar
- 2 tbsp milk
- 1/2 tsp vanilla extract
Directions:
1. In a mixing bowl, combine the warm milk, melted butter, and sugar. Sprinkle the yeast over the mixture and let it sit for about 5 minutes until it becomes foamy.
2. In another bowl, whisk together the all-purpose flour, cocoa powder, and salt. After the yeast mixture is ready, add it to the bowl, along with the egg, vanilla extract, and red food coloring. Mix until a soft dough forms.
3. Knead the dough on a floured surface until it becomes smooth and elastic, approximately 5 to 7 minutes.
Transfer the dough to a greased bowl, cover it with a cloth, and let it rise in a warm place until it doubles in size, about 1 hour.
4. Once the dough has risen, punch it down and roll it out into a rectangle, about 1/4 inch thick.
5. Spread the softened vegetable spread over the dough. In a small bowl, mix together the brown sugar and cinnamon, then sprinkle this mixture evenly over the spread.
6. Roll the dough tightly from one end to the other to form a log. Slice the log into 10-12 equal pieces.
7. Arrange the slices in a greased baking dish, cover, and allow them to rise for another 30 minutes.
8. Preheat your oven to 350°F (175°C) and bake the rolls for about 20-25 minutes until they are lightly golden.
9. While the rolls are baking, prepare the icing by whisking together the cream cheese, powdered sugar, milk, and vanilla extract until smooth.
10. Drizzle the cream cheese icing over the warm cinnamon rolls just before serving.
