 Slow Cooker Italian Pot Roast Recipe



Ingredients:

1 (3-4 lb) beef chuck roast

2 tbsp olive oil

1 large onion, chopped

3 cloves garlic, minced

1 (14.5 oz) can diced tomatoes

1 (6 oz) can tomato paste

1 cup beef broth

1/2 cup red wine (optional)

1 tsp dried Italian seasoning

1 tsp dried basil

1/2 tsp dried thyme

1/2 tsp dried rosemary

1/2 tsp salt

1/4 tsp black pepper

3 large carrots, sliced

3 celery stalks, chopped

2 cups baby potatoes, halved

Fresh parsley, chopped, for garnish

Instructions:

Sear the Roast (Optional for Extra Flavor):


Heat olive oil in a large skillet over medium-high heat. Season the roast with salt and pepper, then sear it on all sides until browned. This step adds flavor but is optional.

Prepare the Slow Cooker:


Place the seared roast in the slow cooker. Add the chopped onions, garlic, carrots, celery, and potatoes around the roast.

Add Seasonings and Liquid:


In a bowl, combine the diced tomatoes, tomato paste, beef broth, red wine (if using), Italian seasoning, basil, thyme, rosemary, salt, and black pepper. Pour this mixture over the roast and vegetables in the slow cooker.

Cook:


Cover and cook on Low for 8-10 hours or High for 5-6 hours, until the roast is tender and easily pulls apart with a fork.

Serve:


Remove the roast and shred or slice as desired. Stir the vegetables and sauce. Garnish with fresh parsley, if desired, and serve warm.
