Tater Tot Breakfast Bowl
Ingredients:
1 bag frozen tater tots
4 large eggs
1/2 cup shredded cheddar cheese
1/2 cup cooked bacon, crumbled
1/4 cup green onions, chopped
1/2 cup bell peppers, diced
1 tablespoon olive oil
Salt and pepper to taste
Hot sauce (optional)
Directions:
Preheat the oven to 425°F (220°C).
Arrange the tater tots in a single layer on a baking sheet. Bake for 20-25 minutes or until crispy and golden brown.
While the tater tots are baking, heat olive oil in a large skillet over medium heat. Add the diced bell peppers and cook for 3-4 minutes, until soft.
Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, or cook longer for firmer eggs.
Remove the tater tots from the oven and arrange them in bowls. Top with cooked eggs, cheddar cheese, crumbled bacon, green onions, and bell peppers.
Season with salt and pepper and drizzle with hot sauce if desired. Serve immediately.
