Ingredients:
- 1 cup pecan halves
- 1 cup granulated sugar
- 1/4 cup unsalted butter
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 8 ounces milk chocolate, chopped
- Sea salt for sprinkling (optional)
Directions:
1. Toast the Pecans:
- Preheat your oven to 350°F (175°C).
- Spread the pecan halves on a baking sheet and toast them for about 8-10 minutes, or until they smell fragrant. Keep an eye on them to avoid burning. Once done, take them out and set aside.
2. Make the Caramel:
- In a medium saucepan over medium heat, combine the granulated sugar and butter.
- Stir constantly until the mixture melts and becomes a light golden color, which should take about 5-7 minutes.
- Carefully add the heavy cream, vanilla extract, and salt. Be cautious as it may bubble up! Stir until everything is smooth and well mixed. Remove from heat.

- On a parchment-lined baking sheet, create clusters of toasted pecans, using about 4-5 halves for each cluster.
- Drizzle the warm caramel over the pecan clusters, making sure they are nicely coated.
4. Melt the Chocolate:
- In a microwave-safe bowl, melt the chopped milk chocolate in 30-second intervals, stirring in between until it’s completely smooth.
5. Top with Chocolate:
- Spoon the melted chocolate over the caramel-covered pecans, ensuring they’re fully covered.
- If you like, sprinkle a little sea salt on top for extra flavor.
6. Let Set:
- Allow the turtle candies to cool at room temperature until the chocolate hardens. If you want to speed things up, pop them in the refrigerator for about 30 minutes.
