Ingredients:

For the Beef and Onion Gravy:


1 lb beef stew meat or flank steak, cut into strips

2 tbsp olive oil

2 large onions, thinly sliced

2 cloves garlic, minced

1 cup beef broth

1/2 cup dry red wine (optional)

1 tbsp Worcestershire sauce

1 tbsp soy sauce

1 tsp dried thyme

1/2 tsp salt

1/2 tsp black pepper

1 tbsp all-purpose flour (for thickening)

1 tbsp butter (optional, for finishing)

For the Fries:


4 large russet potatoes, peeled and cut into fries

2 tbsp vegetable oil

Salt, to taste

Fresh parsley (optional, for garnish)

Instructions:

Prepare the Fries:


Preheat your oven to 425°F (220°C).

Toss the cut potatoes in vegetable oil and spread them out in a single layer on a baking sheet.

Season with salt and bake for 30-35 minutes, flipping halfway through, until golden and crispy.

Cook the Beef and Onions:


While the fries bake, heat olive oil in a large skillet or Dutch oven over medium-high heat.

Add the beef strips and sear on all sides until browned, about 4-5 minutes. Remove the beef from the skillet and set aside.

In the same skillet, add the sliced onions and cook, stirring occasionally, until softened and caramelized, about 10-12 minutes.

Stir in the garlic and cook for an additional minute.

Make the Gravy:


Sprinkle the flour over the onions and garlic, stirring to combine. Cook for 1-2 minutes to eliminate the raw flour taste.

Slowly pour in the beef broth, stirring constantly to avoid lumps. Add the red wine, Worcestershire sauce, soy sauce, thyme, salt, and pepper.

Bring to a simmer and cook for 5-7 minutes, or until the gravy thickens slightly.

Add the beef back into the skillet and stir to coat in the gravy. Let everything simmer together for another 5-7 minutes until the beef is cooked through and tender.

Finish the Gravy (Optional):


Stir in the butter for a richer, smoother gravy if desired. Taste and adjust seasoning if needed.

Serve:


Plate the crispy fries and top them generously with the beef and onion gravy.

Garnish with fresh parsley if desired.
