Cheesy Chicken and Rice 🧀🍗🍚
Ingredients:
1½ cups long-grain white rice
2 cans (10.5 oz each) cream of chicken soup
2 cups milk
1 cup water
1 packet onion soup mix
1½ cups shredded cheddar cheese, divided
3 boneless, skinless chicken breasts
Salt and freshly ground black pepper, to taste
Instructions:
Preheat Oven: Set oven to 350°F (175°C). Grease a 9x13-inch baking dish with non-stick cooking spray.
Prepare Rice Mixture: In a bowl, combine rice, cream of chicken soup, milk, water, and onion soup mix. Stir until well mixed. Pour the mixture into the prepared baking dish and sprinkle with half of the shredded cheddar cheese.
Add Chicken: Place the chicken breasts on top of the rice mixture. Season with salt and freshly ground black pepper.
Bake: Cover the dish with aluminum foil and bake for 1½ to 2 hours, or until the rice is tender and the chicken is cooked through.
Add Remaining Cheese: Remove from oven, uncover, and sprinkle the remaining shredded cheddar cheese on top. Allow to cool for 15-20 minutes before serving.
Notes:
For added flavor, consider mixing in fresh herbs like thyme or parsley into the rice mixture.
Ensure the dish is covered tightly with foil to trap steam, which helps cook the rice evenly.
